Oh! I know Chinese mitten crabs. The Chinese mitten crabs from the Yangcheng Lake in Jiangsu are famous across China! The orangey-red of the crab roe that congeals into a solid chunk in its belly or the translucent white of the crab fat. It's highly nutritious and it is really fresh tasting.
