You can start at the beginning, or just choose topics that interest you and start with those podcasts. They are not linear, so you can pick up wherever you like and start learning immediately!
As far as your 好... (hǎo) question,check out this Qing Wen episode, that discusses that issue and gives you some examples. It should help!

If they are a person you are completely unfamiliar with, you wouldn't use this expression. It can be used formally and informally too, as long as this is the situation.
认识你我很高兴. (Rènshi nǐ wǒ hěn gāoxìng.) therefore is a little more generic.

Can't really tell from the pic if that is a long version or short version of the men's robe, but here is both:
长袍 (chángpáo) the long, robe-like Chinese men's garment
马褂 (mǎguà) men's short coat

久仰 (jiǔyǎng) is only for first meetings. When you meet someone again, it would be more common and natural to say something like:
你好,你好, 最近怎么样啊?
(Nǐhǎo, nǐhǎo, zuìjìn zěnmeyàng a?)
or:
你来啦！最近还好吧.
(Nǐ lái la！Zuìjìn hái hǎo ba.)
