建造 has a more general usage. It can be used for buildings, bridges, stadiums, etc. 盖 is a lot more colloquial and it's mostly used with houses, e.g..盖房子. You can't say 盖桥。

I don't think “小姐” is an outdated title, at least not in Shanghai. And it's not considered offensive here either.

"你有什么事啊" is pretty neutral, but if you want to be more polite, you can say, "请问你有什么事?"

In Shanghai, we call older women "阿姨/āyí/auntie" and they won't think you are calling them nannies. You can call older women "师傅/shīfu" if they work in the service industry.

You asked a tough question. I can't figure out the exact answer even after googling because the etymology is unclear. But the story goes that the word 行李 was coined about 2000 years ago, no one knows why and how. It first meant a traveler and changed to mean luggage overtime. It reminds me of the story behind 东西/dōngxi and 买东西/mǎidōngxī. The word came into being during Tang Dynasty where there were 2 big markets in Chang'an (now Xi'an). One market was in the city's East/dōng, the other was in the West/xī. People used to say they had to go the East or West market to buy things. Overtime, it evolved to 买东西/mǎidōngxī.
