您所描述的是道著名的客家菜，不過呢
醬現下不拿，榴蕃臂調費柴
這樣做味道更鮮美（媽媽說的）

That's Hakka food（客家菜肴） wchan is describing. Yes, he used 客家方言 together with 普通話. I know it can be quite confusing but I guess that's the best way to describe a Hakka food.
BTW I‘m a 客家人 that's why I can make out what he says。
