December 2, 2009 at 2:32 AM@matt_c Most intense was definitely in downtown Chongqing. Can't remember the name of the restaurant... I blame it on feeling "spice drunk," if you know what I mean... My asophogus was burning for 10 hours afterwards.
The pot is divided into many sections (all the same broth) and each person at the table gets their own section - I prefer this to how we do it in Shanghai.
While you're eating, you pull out STRANDS of 麻辣 peppercorns. This picture only shows the red peppers, but the ma la is definitely in there!
