Very interesting questions! You can say 电动扶梯 and 自动扶梯 for escalators. As for 处 and 所, they have quite similar usages in the sense that they can both mean "area; place". For example, 住所 and 住处 literally mean "living place" (residence).

The official language in Macau is Mandarin Chinese and Portuguese, but most people speak Cantonese. English is very commonly used there too!

Good question! 文 usually puts more emphasis on the written language while 語 and 話 focus on the spoken language. But nowadays most people use the words interchangeably.
