Hi, that's a good question! 择日不如撞日 is a set expression and you can not really change characters in an expression! 择时 however is a word that we also use, which means "to choose the timing".

Good question! 副驾 actually refers to "shotgun seat" and "the person who is sitting in the front passenger seat". In this case, it's the latter meaning. The 做 in 做副驾 means "to be". So altogether, 做副驾 means "to be the one in the front passenger seat". I hope this helps!
