"我才不信呢" 有“开玩笑”的感觉。“我不相信你” is serious.

Here 得 is a verb means "gain, get, acquire".
As a phrase, 得了 has a meaning of 'to be finished, to be ready, thats enough'.

不得了bùdéliǎo is a phrase means : adj. desperately serious; adv. extremely
他帅得不得了！

2. 才刚 (cái gāng) is not a word, it's 才（just now, adv. )+刚（just, adv.).
For example,
我才刚（刚）来上海两天。
I've just been to Shanghai for two days.
刚才 is a noun, For example,
刚才你去哪儿了？
(Where did you go just now?)
