Actually they all are used in different circumstances. 

Take 我一天看一本书 as an example, I'll briefly explain the difference down below. 

我一天 会 看一本书。I read a book a day. 

我一天 能 看一本书。Under a certain situation, I can read a book a day. (Maybe you're working in the day so in this case, reading a book a day is possible. )

Grammatically speaking, 不都 structure is correct, but it is seldom used in conversations. You can try saying 不全都, which is a more common term of saying not all of them. For example, 这些饮料，我不全都喜欢，我只喜欢这三瓶饮料。

Actually the word 他 can be used on both gender. Fun fact is that the word 她 is invented and widely used after the gender equality concept entered in China from the west in the 1900s.
