"什么"是什么意思 ?

Hey Poddies,
I'm quite confused with these sentences with 什么:
反儿有时候儿他就采取一些什么方式。有时候儿那个什么，好比那个有一次呢，考试，有一同学是说，说什么呀。
I can't get what 什么 means there. Moreover there's no general context, it comes from an oral corpus. Any ideas ?

In those cases, 什么 is not 'what'. It's like 'something uncertain'.

他就采取一些什么方式. I know he is going to do something. But I am not sure what it is. 什么方式

他们要去什么饭店。They are going to some restaurant.
